Homemade tomato chutney


Ingredients 500g Spanish onion, finely sliced 1kg tomato, chopped 4 garlic cloves, sliced 1 red chili, cut (optional) 4cm piece ginger, unclothed and cut 250g sugar 150ml vino vinegar 5 cardamom seeds ½ tsp paprika

Method STEP 1 Tip all the ingredients into an oversized heavy-based pan and produce to a delicate simmer, stirring oft. Simmer for one 60 minutes, then awaken a delicate boil so the mixture turns dark, jammy and glossy. Place into sterilised jars and permit to chill before covering. can keep for six weeks.
